Taco Chicken Bowls

I hadn't made a crock pot dinner in awhile, so I decided to try a new recipe on Sunday. These taco chicken bowls are super easy and perfect for a chilly Sunday night.

What you need:
1 1/2 lb chicken breast
1 jar of salsa (your choice)
1 (15 oz) can black beans- drained
1 (15 oz) can kidney beans-drained
1 (8 oz) bag frozen corn
1 TBSP chili powder
1/2 TBSP cumin
1/2 TBSP minced garlic
1/2 tsp dried oregano
1/4 tsp salt
1 "boil in bag" of white rice
1/2 bunch of cilantro- chopped
1 bag Mexican cheese
Sour cream (optional)

Place your raw chicken at the bottom of the crock pot. Pour the salsa, beans, corn and spices on top.  Add 1/4 cup of water and mix everything together, but leaving the chicken on the bottom. Cook on Low for 8  hours.

 
When its finished, the chicken should be tender. Take two forks and pull it apart to shred it. Give everything one last mix and let it sit for 10 minutes.
 
 
In the meantime, begin to boil your rice per instructions. When its done, add the cilantro.
 
 
Now its time to build our taco bowls!!! Place a cup of rice on the bottom of the bowl and scoop a couple spoon fulls of the taco sauce on top. Finish it off with the Mexican cheese and sour cream. YUM!!! This has a lot of the same ingredients as my chili, so it has a lot of the same flavors. But the chicken, corn and rice really spice it up! Will definitely be making this again soon!
