Texican Burgers

I heart TexMex- so when I saw this recipe for a "Texican Burger" I knew I needed to give it a whirl.

What you need:
2 burger patties
2 buns (toasted)
1 avocado (sliced or smashed)
2 tomatoes (diced)
1/2 red onion (diced)
1 lime
1 can of re fried beans
Shredded Monterey Jack cheese







Cook your burgers to your liking on the grill, stove or foreman. Add a handful of monterey jack cheese about a minute before they are done.


While they are cooking, its time to make your pico de gallo. Combine your diced tomato and red onion in a small bowl. Add your lime juice and mix everything together (if you like spice you can add a diced jalapeno! ole!) 


On one half of your bun, spread a spoonful of re fried beans. On the other half, spread a spoonful of mashed avocado, and top it with a spoonful of pico de gallo. Lastly, top this half with your cheeseburger.



Now these two halves look great alone, but as the Spice Girls once said "tonight is the night, when two become one" and this is one super packed and overflowing heavenly burger. Delicioso! And it only takes 12 minutes to make from start to finish!
